1 pound fresh snapper or salmon fillets

2 tbsp. canola or olive oil

2 tbsp Chinese cooking wine

3 Georgia peaches , peeled, pitted and halved

3 limes

1 tsp finely chipped chives

Soy sauce


Prepare grill..

Cut fish cross-wise into thick strips and brush with oil and cooking wine

Brush peach halves with oil and place cut side down on grill and cook 7-8  minutes

Cook fish n grill 2-3 minutes per side

Make sauce by mixing the juice from the limes with chives and soy sauce to taste (Note: there is a lot of sodioum in soy sauce)
